Cucumber
  • Cucumber is one of the richest vegetables in water, providing very few calories (12 kcal per 100 grams of food).

  • It provides fibre, a low amount of vitamin C, provitamin A and vitamin E, and, in lower proportions, group B vitamins such as folates, B1, B2 and B3. Adding to this, small amounts of beta-carotene are found on the cucumber skin.

  • The most abundant mineral in cucumbers is potassium, and to a lesser extent, phosphorus and magnesium are also found.
