Tomato
  • Lycopene reaches its peak of concentration in a more mature, intense red fruit. This carotenoid has a high antioxidant power.

  • As the fruit grows attached to its bush, the different nutrients will change their concentrations as the fruit matures and changes its colour. For example, carotene, which is an orange pigment, will be found in higher concentration in the yellow/orange coloured fruits.

  • Another aspect to highlight is that the mashed and cooked tomato, together with its combination with oil (as a dressing), facilitate the incorporation of lycopene into our body (absorption).

  • Furthermore, it also contains provitamin A (beta-carotenes) and is rich in vitamins C and E.
