COURGETTE SPAGHETTI WITH TOMATOES AND PRAWNS
• 2 courgettes
• 10 cherry tomatoes
• 4 cloves of garlic
• 2 chili peppers
• 250 g prawns
• Extra virgin olive oil
• 1 sprig of chopped parsley
Wash and remove the sides of the courgette. Then, with a spiral vegetable cutter, make the spaghetti.
Put the courgette spaghetti on absorbent paper to get the most liquid out. Let drain while prawns are cooked.
In a large saucepan put olive oil, and add the garlic and chillies, cook over medium heat for two minutes.
Add the peeled prawns, salt and pepper. Let cook for five minutes or until they change color.
Add the courgette spaghetti and the sliced tomato in the prawn mixture and let cook for about five more minutes.
Adjust the salt point if necessary. Add the chopped parsley and serve very hot.
