• 3 eggs
• 1 large aubergines
• 200gr of cured ham with tacos
• Olive oil
Cut the aubergine into slices and put it in a bowl with hot water for about 10-15 minutes, so that its bitterness disappears. Then cut it into cubes and fry it with olive oil and pepper.
When it is almost done, add the cured ham and let stir a few minutes.
Beat the eggs and add it to the pan over low heat. Stir until it begins to set and it would be ready. We can accompany with some toasts of bread.
